You can create as many categories or subcategories that you want.  You can choose your own product hierarchy.
A category might be called ‘Clothes’ a sub-category could be ‘jumpers’, another ‘trousers’ and so on.
Or you could have a category called ‘jumpers’ and a sub-category called ‘extra large’ depending on how you want your merchandise to be categorized.
