A newsletter subscription field is a very useful tool which allows you to keep a database of interested visitors who have opted to recive a newsletter from your business.
You might choose to send this via email or you might send it as a mail shot (however most people send a newsletter via email), this in turn could be used in conjunction with email software (I recommend Mail Chimp).
The newsletter could be targeting your subscribers in a number of ways from promoting your products and services, or directing them to certain new areas of your website, to competitions or vital feedback needed to improve areas of your business.
To encourage people to sign up to your newsletter you could offer a ploy in order to get them to do this, e.g. first 200 email subcribers will get entry into our free draw for a whopping great big hamper etc. You can come up with whatever strategies you want to entice – said the spider to the fly!
